Skipping the circling reads as cold, not efficient.
The single strongest opener in Spain is a food question with a specific opinion attached. 'Are you Team jamón ibérico or Team jamón serrano?' is a much better first line than 'What do you do for work?', and it will keep the conversation going for twenty minutes on its own. From food you can move to the town they are from, the town their parents are from, and the weekend plan for the following Saturday — three questions that will produce more real information than anything on a standard first-date list.
Topics to avoid on a Spanish first date: American-style political labels, direct salary questions, anything critical of the region they are from (even if they are complaining first), and the phrase 'what are we?'. That last one, translated as '¿qué somos?', is a running Spanish meme for a reason. Even people who want a serious relationship react badly to the question in the first three hours of knowing each other.
Topics that consistently work: the last long trip they took, the last live music they saw, the food from their childhood they cannot find in the city they live in now, whether they have Sunday family lunch tradition (almost everyone does, and it is a fast route to real conversation about how they were raised). Ask any three of these and the date usually extends by an hour without either person noticing.
